I want to start a graphic design service and I also got a background in gfx how should I start about this (what products to add in a portfolio) and what kind of services are wanted on these kind of forums? Because I see a lot of AI generated stuff for 10 bucks. So is this even worth starting?

You should start with analysing marketplace to see the thread design and siggy of the sellers in multiple category and then rest is on your imagination. You will get a brief idea of the things people gets attracted with viewing some marketplace thread designs and all.
