If you have any bakeries in your area i'd suggest asking around to shadow a baker, they may appreciate the extra help and you can learn under them as you do. There's no better source for learning than an actual person.

Of course I'd also suggest simply altering recipes, try a little more or less of certain ingredients, learn what things actually do to the recipe and how it effects the final outcome, learning how each individual attribute effects the outcome will help you learn how to adjust any recipe to better fit your liking or desired result.

Don't be afraid to experiment, it's the best way to learn, we learn best from our mistakes and exploring how things work.

Master the craft of making sourdough bread. It tastes good and it's fun to make. I make all my bread at home for way cheaper than buying at the store.

Also I love raisins in my bread, I hope I'm not the only one lol.
