Welcome. I'll quote something I wrote about a month ago about VPNs and staying safe from law enforcement:

Not entirely accurate as you have little to no control over the VPS itself, meaning that if any law enforcement agency obtains a warrant to collect and preserve digital evidence, they can quickly seize the physical machine without you even knowing. Most VPS companies won't encrypt their disks for you because they aren't privacy-oriented. They will hand your logs over to the police whenever they ask, as your illegal activity is not their priority. The rule of thumb is encrypted data is always safer, so if you can encrypt a disk with a strong encryption algorithm, and only you know the password, none except you will access the disk.

VPNs are secure if they aren't based in countries operating within intelligence alliances, like the Five Eyes, the Nine Eyes or the Fourteen Eyes, and they explicitly say they don't save logs in the Terms of Service, not just for advertising purposes (example). Anyway, law enforcement won't build a case entirely on VPNs logs, assuming there are any.
