Perhaps setup your own mail server just need to get a domain and hosting hosting can be free with netlify and domain less then 1$ or use seized.us it will not stay online for long tho keep that in mind

You should go for Protonmail on their .onion alias. It's probably the closest you can get to a completely anonymous email address (unless you host it yourself).
I have never heard of seized.us, but it reminds me of the XMPP service crime.io, and services with cool crime-related names are usually run by the feds.
