[question] how to use and infect someone's with a RAT

Okay so, maybe a stupid question but I'm currently wasting scammers's time and now I'd like to infiltrate them with a RAT, only problem is I don't know how to get the scammer's IP to put in the RAT to build the .exe file? (I already have the software to create those).

I've seen that it's possible to hide the RAT in an image and that the PC gets infected simply by opening the image... without needing the IP...

With a RAT i hope you mean remote acess trojan .
For that you don't need his ip , you just need some builder like NanoCore and make him open the .exe
That's the only way actually that we have to infect someone with a RAT
You will not get any information with his ip and with a "RAT".
