Electrum. Anyone telling you otherwise is bullshitting you and doesn't know shit about privacy. Take my word on it if that's the way you're going. Have a electrum wallet on your phone and one on PC. Purchase on your phone then transfer to your PC wallet, make them different and you're fine. Of course you can throw in a bitcoin tumbler in between which is what I do. Electrum Wallet 1 -> Tumbler -> Electrum Wallet 2. Nothing more, nothing less.

Yea, grabbing your private keys is important because otherwise you don't really "own" the wallet. With your private keys in hand (backed up however you prefer, electronic or paper), you can use import it into majority of exchanges if you ever need to later (Electrum, for instance, has more exact fee control, so if you wish to have a faster or cheaper transaction you can import your wallet into their service and send the transaction through them).
