Ensuring the Privacy of your Communications

How can one ensure the privacy of their communications. Sure there are lots of end-to-end encryption platforms out there. But does this really ensure privacy? Of course, there are two channels that can leak information - the technical and the human. So ensuring use of a secure platform only protects your privacy if you trust the person on the other end of the communication. 
 
When you want to ensure the privacy of your communications, what is your go to platform, application etc?
