There are a lot of things you can do to get in that phone and as you said you already have valuable information like what interests this person, her phone number, her email address, and because your "friend" already knows her so he should know what she likes and she doesn't like, which bank, which store she shops in, what laptop or phone she has, what being said i think below is what you can do :

- Android :

1-Android RAT to gain access to the phone :
Send her a phishing SMS that contains a link to the RAT APK and because you already know this person so you should know which bank she uses or which service she is using so you can simply say :
From : Bank XX (custom sender ID)
Message : We have detected a malicious activity in bank XX account, please follow the instructions in the link below to protect your account immediately : APK Link XX

Once she downloads the APK you should be in the device

2- SMS RAT
You can follow the same exact steps as above to get every SMS she receives

1 & 2 : 
If you couldn't get her to download the APK then get a VOIP service and spoof the phone number to the Bank XX phone number then call her and tell her the bank will close her accounts if she doesn't protect her account by downloading and following the instructions, etc... 


3- SCAM pages
You can do this to get her into signing in into for example fake facebook page so you can get access to her facebook profile (you can get these pages for free from github)

4- SIM Swap
This is very advanced option but gets the job done, Swap the SIM to get access to her Whatsapp, telegram, facebook, etc...
