How to spy an iPhone?

I have been hired to spy a person's iPhone, which to be honest I don't have much experience with iOs and iPhone in general.
It's important to note that I have physical access to that device and I would like to log and capture every interaction this person will have with the device.
I was thinking in buying some of these OMG Elite Cable to be sure the device will be infected with some malware/spyware. So what spyware will allow me to gather the maximum information as possible? Or should I go for some RAT instead?

For iPhone is rough. Tight security but you'll need a high end software so that it stays undetected for a long time without being removed.

Don't know of any softwares personally but that'll be the hard bit you can worry about infection once you have the software
