VeraCrypt is a HDD encryption tool with a built in "plausible deniability feature". 
So, ideally what you would want to do is encrypt your entire HDD with AES (don't bother
 with all those other crazy encryption schemes or cascading encryption, 
AES is what you want). Encrypt your entire HDD but create a 2nd partition and install Windows on it. Then download a bunch of
 software, download LibreOffice and put a bunch of documents in folders on 
your desktop, change the wallpaper, the idea is to make it look USED, as if
 this is the main partition you use for your everyday business stuff. So, essentially,
 you will have two boot passwords. One password will boot you to your Ubuntu drive, but 
if you get raided, try to be hesitant, but finally say you're willing to give up your HDD password and give them the one to the Windows partition.
 (Unless you're in the U.S.A, you're not required to give out passwords) Since the drive is fully 100% encrypted, there is no way, not even using forensic 
software, can they tell you have a separate partition running Ubuntu.
