SECRUE EMAIL PROVIDER?

I am using Protonmail, but not a fan of the CEO.

What email provider do you use?

proton is good if you are not doing anything high profile
tutanota is another good option

My problem is that they log everything ( Protonmail )

you can disable security logs in proton mail from your side, from the server side they probably log shit aswell, yes. they did leak an ip one time but that was a court ordered. if you are not doing anything high profile you shouuld be good. also you can add a layer of security by accessing through TOR and encrypting your messages with PGP

In case it is "High profile" then the best option would be to get a private hosted mail server?

honestly the best thing you could do is avoid emails alltogether if you are afraid of youur ip being leaked. use alternate means of communication like jabber or maybe Session
but vpn+tutanota/proton+pgp is pretty bulletproof considering that both providers have .onion adresses
