Who pays the fees?
When using our plugins, API, or making an invoice to send to your customer(s) you'll be able to set if you want your customer(s) to pay the fees, or set the fees to yourself to pay.

The customer still has the gateway fees for the payment processor, yes. If you set that they don't pay the fees then the 5% merchant fee isn't set on them to pay.

As for your question on Stripe, it's still Stripe. It's StripeLink, which is Stripe. It's a Credit/Debit card processor that will allow the customer to pay with their card after they go through the simple steps asked of them depending on their risk score. After they do it once they won't be asked to verify that info again as long as they use the same info the next time they pay through StripeLink.

Our system works just fine and is open pretty simple to use as long as you know how to read. You can make a "demo" order within seconds after making an account by going to the payments section on the dashboard and clicking "Create"

All of the current payment gateways we offer work and have no issues as long as the customer goes through the steps given and pays with legit info.

PayPal just redirects customers to buy crypto. How is that useful to anyone?

"How is this useful"? It allows the customer to pay you with their paypal account balance, bank, card, etc. on their paypal account. And gives no risk to you of losing your paypal account. The payment gateways works, and it works for many of our merchants without issues. The customer just needs to have a bit of a brain and have legit info to help go through what is asked of the gateway to pay. If they can't give that info, they it won't work obviously.
